There are many theories as to where the term "grey' hound came from. I just read a couple I'd not heard of before. There's one theory that it comes from the word "grais'
Meaning Grecian, or the word "grech' which is an Old English word for dog. The most likely is that it has to do with the term "gaze' hound, as that is what they have done for several thousand years at least. Gaze ahead and find the prey.
"Coursing' is the matching of the speed of one animal against another, similar to the greyhound racing of today. It seems that the greyhound's work as a course hound is a very old one. Even the Celts would set two hounds out to chase a hare and there was competition as to which of the dogs was the faster. There have been coursing clubs since the 19th century in Great Britain, and it carries on today.
I just looked at an old painting from the 1400s with very modern looking greyhounds coursing. This is all new to me, but the greyhound aficionado probably is already aware of this information.
